Ingredients
 
 

Salad Ingredients:

  • ½ cup ricotta cheese
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • Freshly ground black pepper
  • 2 cups fresh spinach leaves
  • 1 dragon fruit cut into balls or ¼” cubes
  • 1 mango cubed or diced
  • ¼ cup toasted pistachios
  • 4 slices of prosciutto ,thinly sliced

Jam Vinaigrette Ingredients:

  • 2 tablespoons of your favorite fruit jam like plum, strawberry, raspberry, or apricot work well
  • 1 tablespoon light sweet vinegar like rice or white wine vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

Make the jam vinaigrette.

  • In a medium bowl, whisk together jam and vinegar. Gradually add olive oil while whisking continuously, until well combined. Finish with a sprinkle of salt and pepper to taste.

Assemble the salad.

  • Prepare the Base: Spread the ricotta cheese on the bottom of a serving plate. Drizzle with olive oil and balsamic vinegar, and sprinkle with freshly ground black pepper.
  • Layer the Spinach and fruit: Place the fresh spinach leaves on top of the ricotta spread. Arrange the dragon fruit balls or cubes and mango on top of the spinach. Sprinkle the toasted pistachios over the salad. Toss the salad gently with the jam vinaigrette.
  • Elevate the salad by garnishing with slices of prosciutto.
