Ingredients
Salad Ingredients:
½cupricotta cheese
1teaspoonolive oil
1teaspoonbalsamic vinegar
Freshly ground black pepper
2cupsfresh spinach leaves
1dragon fruitcut into balls or ¼” cubes
1mangocubed or diced
¼cuptoasted pistachios
4slicesof prosciutto,thinly sliced
Jam Vinaigrette Ingredients:
2tablespoonsof your favorite fruit jamlike plum, strawberry, raspberry, or apricot work well
1tablespoonlight sweet vinegar like rice or white wine vinegar
In a medium bowl, whisk together jam and vinegar. Gradually add olive oil while whisking continuously, until well combined. Finish with a sprinkle of salt and pepper to taste.
Assemble the salad.
Prepare the Base: Spread the ricotta cheese on the bottom of a serving plate. Drizzle with olive oil and balsamic vinegar, and sprinkle with freshly ground black pepper.
Layer the Spinach and fruit: Place the fresh spinach leaves on top of the ricotta spread. Arrange the dragon fruit balls or cubes and mango on top of the spinach. Sprinkle the toasted pistachios over the salad. Toss the salad gently with the jam vinaigrette.
Elevate the salad by garnishing with slices of prosciutto.
