A Valentine's Day Cocktail
Nothing says celebration quite like a sparkling cocktail. This Valentine’s day cocktail is a muddled blackberry and mint champagne (or prosecco) that is simple to make yet feels extra special.
This blackberry cocktail is a close cousin to the blackberry bramble cocktail but we swap out the gin for champagne (or club soda if you want to keep it a mocktail). To make this cocktail you will need:
- Fresh blackberries muddled with fresh mint leaves.
- Fresh squeezed lime juice for a bright citrus note.
- Simple syrup to bring out the natural sweetness of the berries
- Champaign, prosecco or club soda to top it off.
See recipe card for full ingredient list and measurements.
How to make a blackberry Valentine’s day cocktail
First you will muddle the blackberries and mint leaves. Do this by placing 6 blackberries, 4-6 mint leaves in a flat bottomed glass. Using a muddler or back of a wooden spoon, gently press down and twist, releasing the blackberry juices and essential oils from the mint, while avoiding crushing them too much. This process is typically done with light pressure and a twisting motion to extract flavors without introducing bitterness, especially when using delicate herbs like mint.
Divide the muddled ingredients evenly into 2 champagne flutes or cocktail glasses of your choice. Then add 1 tablespoon lime juice, and 2 Tablespoons simple syrup to each flute or glass.
Top off with chilled champagne or club soda (for a mocktail), stir gently, taste and adjust with more lime, simple syrup or champagne.
Roasted Grape Tomatoes and Burrata Appetizer
Start your Valentine's day dinner at home on a delicious note with a roasted grape tomatoes and burrata appetizer. Roasted grape tomatoes in the oven allows them to become soft and full of flavors. They have a nice acidic tanginess but hold a good deal of natural sweetness too.
Served with Burrata a fresh, soft Italian cheese with a rich, creamy flavor and a soft, fresh exterior is a perfect pairing with the roasted grape tomatoes. When torn apart you will find the inside is smooth and velvety.
First Preheat your oven to 400 degrees F. Then toss about 1 pint of grape tomatoes lightly with olive oil on a sheet pan. Spread them evenly into one layer and sprinkle generously with kosher salt and pepper.
Roast for 15 to 20 minutes, until the tomatoes are bursting with flavor, then tear a burrata ball (about 3 oz) in half or in chunks and place them on a platter. Spoon the roasted grape tomatoes around the cheese.
Drizzle the burrata with the oil, balsamic vinegar, then sprinkle a few flakes of sea salt and a few grinds of freshly ground black pepper over the cheese. Sprinkle finely sliced basil (about 1-½ tablespoons) over the salad. Serve with crusty bread, if desired.
It’s the perfect mix of indulgent and light to whet your appetite for the main course.
Valentine’s Pasta: Italian Prosciutto Pasta Recipe with Mushrooms
For the main event, this creamy mushroom pasta with crispy prosciutto and a touch of lemon is a showstopper. The earthy mushrooms and salty, crispy prosciutto create a rich and satisfying flavor that’s balanced by the bright citrus notes.
Pair this dish with a crisp white wine like a sauvignon blanc or a light pinot noir for a perfect complement.
Salad Pairing: Apple Manchego and Arugula Salad
Picture this: juicy apple slices mingling with nutty Manchego cheese, all tossed together with peppery arugula and candied nuts in an orange citrus vinaigrette. This Apple Manchego and Arugula Salad is the perfect sidekick to the creamy pasta.
Valentine’s Day Dessert | Crème Brulee
Five simple ingredients – cream, vanilla, salt, eggs and sugar – make for an exquisitely rich and elegant dessert. Most crème brûlée recipes are a bit more complicated, but this Easy Crème Brûlée Recipe for 2 + Flavor Variations you can make in about 10 minutes and it’s really good.
Before your Valentine's day date night at home, It is super important to let the custard set for several hours in the refrigerator before brûléeing the top, otherwise you'll end up with soupy custard. I recommend you prepare the custard and bake the night before or the morning of the date.
TIP: No Torch? No worries, we will use the oven broiler method. First, adjust the oven rack so that the ramekins are 2 to 3 inches beneath the broiler coils. Place the ramekins on a rimmed baking sheet. Now place in the oven and turn set to “broil”. Cook until sugar melts and browns or even blackens a bit, this will take about 5 minutes but check frequently to prevent charing.
Keeping your at home Valentines day idea (cooking date night) fun
This Valentine’s Day, skip the reservations and plan a romantic evening at home that’s all about love, laughter, and delicious food. With this curated menu, a festive cocktail, and a few fun ideas to keep the evening stress-free, you’ll create memories that last long after the plates are cleared. Here’s a couple of tips to keep your cooking date-night fun.
1. Shop the night before
Mark and I think it is fun to do this together when we can. I recommend doing the night before or up to 4 days before for this menu. For the recipes found on Our Table 4 2 you can generate a grocery list, this is accessible on your mobile phone or you can print it.
- Go To Recipe Box from the Home Menu
- Select 2025 Valentines Day Menu under Your Collections in My Recipe Collections
- Click on the shopping cart icon in the upper right
- Select Recipes you want to make and click the cart icon in the top right to generate the shopping list.
Assign items to each person and meet back at the check out. Each of you grab a separate cart, so you avoid having to track each other down in the store. We often send texts and pictures of what we’re buying or questions to each other while in the store….just to keep it fun.
2. Pick your playlist
Now that you have your menu planned and the shopping complete, continue to create the mood with a playlist. Consider starting more lively for cooking and then later move to slower songs when you’re dining.
3. Divide up the tasks
Mark and I found it’s easiest to work in the kitchen by delegating a “lead” on the recipe, and a “sous chef” (from the French “under” referring to the second in command in a kitchen). The lead reads the recipe and delegates tasks to the partner and themselves.
The sous chef gets to relax sip their cocktail or mocktail drink while chopping and mixing, without worring about what is next. Consider alternating roles for each recipe.
4. Keep it fun and flirty
Staying home can be really fun if you make it so.
- Enjoy each other’s company and opportunity to work together.
- Make sure you “accidentally” bump into each other a lot while you are working.
- Share a taste test portion of one or more meals.
- Have fun flirting and being romantic, and don’t be afraid to take a short break from cooking and dance to the music!
