Nothing says celebration quite like a sparkling cocktail. This Valentine’s day cocktail is a muddled blackberry and mint champagne (or prosecco) that is simple to make yet feels extra special.

Ingredients
Blackberry Cocktail or Mocktail
6ouncesblackberries,fresh
12mint leaves,fresh
Juice of 1 lime
2tablespoonssimple syrup*see note for homemade recipe
Prosecco for a cocktail or club soda,soda water, or sparkling water for mocktail
Extra blackberries.mint, and lime slices for garnish
Instructions
In each 12 oz old fashioned glass, place 6 blackberries, 6 mint leaves, 2 tablespoons lime juice, and 4 tablespoons simple syrup.
Muddle the blackberries and mint to extract all the flavors using a muddler or the back of a wooden spoon.
Fill the glasses with ice, add ⅔ cup champagne or prosecco for a cocktail (club soda for a mocktail) and stir gently.
Garnish with extra blackberries, mint leaves, and lime slices. Enjoy!
Notes
Note: Create your own homemade simple syrup by bringing 1 cup water and 1 cup sugar (white or raw) to a boil. Stir until the sugar dissolves, remove from heat, and let cool completely.
