Sheet Pan Chicken with Ratatouille For Two

This sheet pan chicken with ratatouille turns two of my favorite dinners-tarragon roasted chicken and classic ratatouille-into an easy one-pan dinner for two. Bone-in chicken breasts roast alongside eggplant, zucchini, red pepper, onion and tomatoes, all finished with thyme, garlic, capers and roasted lemon. The whole dinner is ready in about 45 minutes, with juicy roasted chicken and tender ratatouille that is flavorful and moist-but not soggy.

When ratatouille meets a sheet pan

I love sheet pan dinners. I love tarragon roasted chicken. And I love classic ratatouille.

So naturally, I wondered: "What if I put them all on one pan?"

Classic ratatouille is one of those dishes that sounds simple until you're actually making it. Slice the vegetables. Cook the vegetables. Use one pan for this and another pan for that. Let everything simmer. And, if you're like me, wait patiently for all that vegetable moisture to cook away.

Patiently is the operative word.

Who has 90 minutes on a weeknight?

I wanted the flavors of ratatouille without all the pans and cooking stages, so I turned to my favorite shortcut: the sheet pan.

And it works.

The large surface area lets the vegetables roast rather than stew, while the dry heat helps their moisture evaporate. The result is a ratatouille that is tender and juicy without turning into a wet vegetable stew-a common problem when all those beautiful summer vegetables cook together.

And because the chicken and vegetables roast side by side, dinner takes about 45 minutes from start to finish.

Yes, there is some chopping. But once everything is on the pan, the oven does the rest.

And honestly? It's lovely.

  • Juicy chicken. Bone-in chicken breasts stay tender while the skin gets beautifully golden.
  • No soggy ratatouille. Roasting gives the vegetables room to release moisture and develop flavor.
  • Big flavor from simple ingredients. Tarragon, thyme, garlic, capers and roasted lemon do a lot of work.
  • Crusty bread is all you need as a side. Although I wouldn't complain about a glass of wine alongside it.

How to make sheet pan chicken with ratatouille

1. Start with a hot sheet pan

Place a rimmed baking sheet in the oven while it preheats to 450°F.

This is an important step.

You're not putting the chicken onto a cold pan. The hot baking sheet gives the chicken skin an immediate blast of heat, helping it brown and crisp instead of slowly warming up and sticking.

When you're ready to cook, carefully brush the hot pan with olive oil.

2. Prepare the sheet pan ratatouille

Cut the eggplant, zucchini, red pepper and onion into roughly ½-inch pieces. Keeping the vegetables close in size helps them cook evenly.

Toss them with drained canned tomatoes, olive oil, thyme, garlic, capers, salt and pepper. I use canned tomatoes here intentionally. Fresh tomatoes are wonderful when they're in season, but canned tomatoes make this a dinner you can make year-round.

And for a dinner for two, using canned tomatoes means you don't have to buy a bunch of fresh tomatoes just to use a portion of them.

3. Prepare the tarragon chicken

Pat the chicken breasts dry with paper towels and season them with salt and pepper.

Then gently loosen the skin and slide a sprig of fresh tarragon underneath.

This is one of those tiny steps that makes a big difference. As the chicken roasts, the tarragon perfumes the meat from underneath the skin.

4. Start the chicken skin-side down

Brush the remaining olive oil over the hot sheet pan.

Place the chicken skin-side down on one side of the pan and spread the vegetables in a single layer on the other side.

Roast for about 10 minutes.

The chicken should begin to release from the pan and the vegetables should just start to wilt. This first roast is essentially giving the chicken a head start on browning while the ratatouille begins to cook.

5. Flip the chicken and add the lemon

Using tongs, carefully flip the chicken so the skin is facing up.

Give the vegetables a good stir.

Then place the lemon halves, cut-side down, on the sheet pan. The lemon roasts right alongside everything else, becoming sweeter and juicier as it cooks.

Continue roasting, stirring the vegetables occasionally, until the chicken reaches 160°F in the thickest part of the breast and the vegetables are tender. This should take another 10 to 15 minutes, although chicken breasts vary in size, so let your thermometer be the guide.

6. Give the ratatouille one last stir

This is the step that makes me especially happy with this recipe.

If the vegetables still look a little wet, give them another stir and let them roast for a few more minutes. You're looking for vegetables that are tender and moist, but not swimming in liquid. The eggplant should be soft, the zucchini tender, the onions sweet and the tomatoes concentrated.

That's sheet-pan ratatouille.

7. Rest, finish and serve

Remove the chicken from the oven and let it rest for about 5 minutes.

Transfer the chicken and ratatouille to a platter and toss the vegetables with the flavorful pan juices. Finish with fresh parsley or tarragon and a squeeze of the roasted lemon over everything.

Then bring on the crusty bread. You'll want something to catch every last bit of that pan juice.

Why this sheet pan ratatouille doesn't get soggy

This is really the reason I started experimenting with this recipe.

Ratatouille contains a lot of water-rich vegetables: zucchini, eggplant, peppers and tomatoes. When they're crowded together in a traditional baking dish, that moisture can collect faster than it evaporates.

Roasting the vegetables on a large sheet pan changes the game.

The vegetables have more surface area exposed to the oven's dry heat, and spreading them into a single layer gives that moisture somewhere to go. Sheet-pan ratatouille recipes use this same basic principle to create a more roasted, caramelized version of the classic vegetable dish.

The key is not to overcrowd the pan.

You want the vegetables spread out, not piled up.

And don't skip the stirring. A quick stir lets different sides of the vegetables make contact with the hot pan and encourages more even browning and evaporation.

What to serve with sheet pan chicken and ratatouille

Honestly, not much. This is already chicken, vegetables and sauce all in one pan.

I like to serve it with crusty bread for soaking up the tomatoey pan juices and roasted lemon.

If you want to stretch the meal a little further, serve it with:

  • A simple green salad
  • Warm crusty sourdough
  • Couscous
  • Rice
  • A small bowl of pasta

But for dinner for two, bread is my vote. Because fewer dishes are kind of the whole point.

A small-table shopping tip

One of my favorite parts of cooking for two is figuring out how to buy just enough of something.

For this recipe, you need only half a red pepper.

Instead of buying a whole pepper and hoping I remember to use the other half before it gets lost in the vegetable drawer, I sometimes head to the grocery store salad bar and pick up exactly what I need.

Six ounces of eggplant? One zucchini? Half a pepper?

That's dinner-for-two shopping.

No vegetable drawer casualties required.

Ingredients
  

Sheet Pan Ratatouille

  • 14.5 ounce canned diced tomatoes, drained
  • 6 ounces eggplant cut into ½-inch pieces
  • 1 zucchini about 6 ounces, cut into ½-inch pieces
  • ½ red pepper cut into ½-inch pieces
  • 1 medium yellow onion cut into ½-inch pieces
  • 3 tablespoons extra-virgin olive oil divided
  • 1 tablespoon minced fresh thyme or 1½ teaspoons dried thyme, divided
  • 1 tablespoon caper berries drained
  • 2 garlic cloves minced
  • Salt and pepper
  • 1 to 2 tablespoons balsamic vinegar , to taste

Tarragon Roasted Chicken

  • 2 10- to 12-ounce bone-in split chicken breasts, trimmed
  • 2 sprigs fresh tarragon
  • 1 lemon halved
  • 2 tablespoons minced fresh parsley

Instructions
 

  • Heat the oven and sheet pan: Adjust the oven rack to the upper-middle position. Place a rimmed baking sheet on the rack and heat the oven to 450°F.
  • Prepare the ratatouille: In a large bowl, toss the drained tomatoes, eggplant, zucchini, red pepper, onion, 2 tablespoons olive oil, 1 teaspoon thyme, garlic, capers, ½ teaspoon salt and ¼ teaspoon pepper.
  • Prepare the chicken: Pat the chicken dry with paper towels and season with salt and pepper. Carefully loosen the skin and slide one sprig of tarragon underneath the skin of each breast.
  • Start roasting: Carefully remove the hot sheet pan from the oven. Brush the remaining 1 tablespoon olive oil evenly over the pan. Place the chicken skin-side down on one side of the sheet pan and spread the vegetables in a single layer on the other side. Roast for about 10 minutes, until the chicken releases from the pan and the vegetables begin to wilt.
  • Flip and add lemon: Using tongs, flip the chicken skin-side up and stir the vegetables. Place the lemon halves cut-side down on the sheet pan. Continue roasting, stirring the vegetables occasionally, until the chicken reaches 165°F in the thickest part of the breast and the vegetables are tender, about 10 to 15 minutes more.
  • Rest the chicken: Remove the sheet pan from the oven. Transfer the chicken to a plate and tent loosely with foil. Let rest for 5 minutes.
  • Finish the ratatouille: Toss the vegetables with the pan juices. Season with balsamic vinegar and additional salt and pepper to taste. Transfer the chicken and vegetables to a serving platter and sprinkle with fresh parsley.
  • Serve: Squeeze the roasted lemon over the chicken and ratatouille. Serve with crusty bread.

Notes

Can I use boneless chicken breasts? Yes, but the cooking time will change. Bone-in split chicken breasts are my preference here because they stay juicy while the skin gets beautifully golden. If using boneless breasts, start checking the temperature earlier.
Can I use dried thyme? Absolutely. Use 1½ teaspoons dried thyme in place of 1 tablespoon fresh thyme. 
Can I make the ratatouille without the chicken?  Yes. Roast the vegetables on their own at 450°F until tender and beginning to caramelize, stirring occasionally. Keep the vegetables in a single layer so they roast rather than steam. What if my vegetables are still wet? Keep roasting. That's the beauty of this method. Stir the vegetables and give them another 5 minutes so excess moisture can evaporate.
Can I make this sheet pan dinner ahead? The vegetables can be chopped earlier in the day and refrigerated separately. For the best chicken skin and roasted texture, assemble and roast the dinner just before serving.
How do I store leftovers? Refrigerate leftover chicken and ratatouille in airtight containers and use within 3 to 4 days. Reheat the chicken and vegetables until hot. USDA recommends reheating leftovers to 165°F.
