What Is a Porto Tonico?
A Porto Tonico (or Port and Tonic) is Portugal's answer to the Aperol Spritz. Traditionally made with white port and tonic water, it's a refreshing cocktail for summer that's light, citrusy, and incredibly easy to make.
The combination sounds unusual at first. Most people think of port as a rich, sweet after-dinner wine served in small glasses. I certainly did.
Then I visited Portugal and discovered an entirely different side of port wine.
Locals were sipping chilled white port mixed with tonic water over ice, garnished with citrus and herbs. One sip and I understood why this cocktail has become a Portuguese favorite. The tonic adds brightness and effervescence while the port contributes fruit, floral notes, and just enough sweetness to make the drink feel balanced and refreshing.
Wait... Port Isn't Always Red?
Like many people, I assumed port meant tawny or ruby port-the rich red styles often served with dessert or cheese boards.
Portugal offers much more than that.

White Port
White port is the traditional choice for a Porto Tonico. Made from white grapes, it ranges from dry to sweet and creates a crisp, refreshing cocktail with citrus and stone-fruit notes.
Rosé Port
Rosé port is my personal favorite for summer cocktails. It brings beautiful berry flavors, a blush-pink color, and a fruit-forward character that pairs perfectly with tonic water. If you're introducing someone to port and tonic for the first time, rosé port is often the easiest place to start.
Tawny Port
Tawny port has rich caramel, nutty, and dried-fruit flavors. While delicious on its own, it's generally too rich and heavy for the bright, refreshing style of a classic Porto Tonico.
Why Port Is Perfect for Cocktails for Two
One of the reasons I love port-based cocktails is practicality.
Unlike many wines that lose their freshness quickly after opening, port keeps remarkably well. Simply replace the cork and store the bottle in a cool place. That means you can enjoy a port and tonic on a warm Wednesday evening and still have plenty left for a Saturday happy hour.
For those of us cooking for two, that's a huge advantage. No pressure to finish an entire bottle at once.
The Garnish
While the cocktail itself is simple, the garnish transforms it into something memorable.
Traditional Portuguese garnishes often include lemon and even a cinnamon stick. For summer entertaining, I prefer something a little more colorful.

Thread a thin orange slice and a strawberry onto a fresh rosemary sprig and rest it across the glass. As you sip, the aroma of rosemary mingles with the fruit-forward port and crisp tonic water. It's refreshing, elegant, and beautiful enough for guests while still being easy enough for a weeknight cocktail.

How to Make a Refreshing Cocktail for Summer: Port and Tonic
The key to a great Porto Tonico is plenty of ice and quality tonic water.
Fill the glass completely with ice before adding the port and tonic. Then use a simple 1:2 mix of dry white port and tonic water. The extra ice keeps the drink cold and refreshing while preventing dilution.
A large balloon wine glass is traditional in Portugal, but a highball glass works beautifully too. Garnish with a a slice of orange and a sprig of rosemary.
Serve it alongside grilled seafood, charcuterie boards, summer salads, or simply enjoy it on the patio after dinner.
