Carrot Upside-Down Cake for Two (6-Inch Cake with Maple Caramel)

This carrot upside-down cake is a riff on my classic carrot cake-but instead of frosting a small two layer cake, I roast whole carrots, arrange them over a buttery maple caramel, and bake them underneath a tender, warmly spiced carrot cake.

Then comes the fun part: flip it.

The roasted carrots become a glossy, caramelized crown, and because this is a 6-inch cake, it makes just enough dessert for two tonight with a few slices left for tomorrow.

And if you are a cream-cheese-frosting person like me, don't skip the maple cream cheese whipped cream. It is lighter than frosting but still has that tangy cream cheese flavor that makes carrot cake so irresistible.

Why make an upside-down carrot cake?

When I was growing up, upside-down cake meant pineapple-usually pineapple from a can, with a bright red cherry in the middle.

I loved that cake, but I started wondering what would happen if I took the flavors of my favorite carrot cake and turned the whole thing upside down.

Turns out, carrots are pretty spectacular this way.

Instead of shredded carrots disappearing into the batter, whole roasted carrots become the star of the cake. Roasting brings out their natural sweetness, and then they bake under a buttery maple caramel until they are tender, glossy and syrupy.

And because I couldn't resist adding maple syrup to roasted carrots-because, really, why wouldn't you?-this little cake has a very good thing going on.

Why roast the carrots first?

This is the extra step that makes this carrot upside-down cake special.

Roasting the carrots first concentrates their natural sweetness and gives them a tender texture before they go into the cake. Once they're arranged over the maple caramel and covered with cake batter, they have just enough time to become beautifully glazed without relying on the cake bake to cook them from raw.

It also makes this recipe easier to manage. You can roast the carrots a day ahead, refrigerate them, and assemble the cake when you're ready for dessert.

Ingredients you'll need

  • Whole carrots - Look for small to medium whole carrots rather than the large, woody ones. I love using a mix of orange, yellow and purple carrots when I can find them. The different colors make the finished cake look almost too pretty to eat. Almost. Roast the carrots whole, then split them lengthwise before arranging them in the pan.
  • Maple syrup, butter and brown sugar. This trio that creates the maple caramel. Real maple syrup brings a deeper, woodsy sweetness that works beautifully with roasted carrots. Butter gives the caramel richness, while brown sugar helps create that sticky, glossy layer that becomes the top of the cake when you invert it.

Carrots in the cake batter

  • Carrots - Yes, there are carrots in the cake and carrots on top. The carrots in the batter are finely shredded so they melt into the cake, giving it the familiar moist texture you expect from carrot cake.
  • Raisins - I like raisins in my carrot cake, so they stay. For the best texture, give them a quick steam before adding them to the batter. Place the raisins in a small bowl, sprinkle with a little water, cover and microwave for about 30 seconds. Let them sit covered while you make the batter.

Maple cream cheese whipped cream

This is not cream cheese frosting.

Instead, softened cream cheese is beaten with powdered sugar, maple syrup and vanilla, then heavy cream is slowly added and whipped until you have medium-stiff peaks.

The result is tangy, maple-sweet and fluffy.

Basically, everything I love about cream cheese frosting without having to frost an entire cake.

How to make carrot upside-down cake

Step 1 | Roast the carrots

Heat the oven to 400°F.

Place the whole carrots in a single layer on a foil-lined baking sheet. Coat lightly with olive oil and sprinkle with a pinch of salt.

Roast until tender, about 30 to 45 minutes, depending on the size of your carrots.

Let them cool enough to handle.

Make-ahead tip: The roasted carrots can be made a day ahead and refrigerated in an airtight container.

Step 2 | Make the maple caramel

Reduce the oven temperature to 350°F.

Grease a 6-inch round cake pan and line the bottom with a round of parchment (see photos below). Grease the parchment, too.

Melt the butter in a small saucepan over medium heat. Add the maple syrup and brown sugar and stir until the sugar dissolves.

Bring the mixture to a gentle boil and cook for about 2 minutes. Remove from the heat and stir in the lemon juice.

Pour the maple caramel into the prepared cake pan.

Step 3 | Arrange the roasted carrots

Split the roasted carrots lengthwise.

Now comes the part where you get to play food stylist.

Arrange the carrots cut-side down over the maple caramel. Fit them snugly together so that when you flip the cake, the carrots create a beautiful pattern across the top.

Don't worry if the arrangement isn't perfect. The caramel does a wonderful job of making everything look intentional.

Step 4 | Make the Cake Batter

Sift together the flour, baking powder, baking soda, salt, cinnamon and cocoa powder.

In another bowl, whisk together the eggs, vanilla, granulated sugar, brown sugar and oil until smooth.

Add the dry ingredients and mix just until combined.

Stir in the finely shredded carrots and steamed raisins.

Don't overmix the batter. Once the flour disappears, you're done.

Step 5 | Bake the cake

Carefully spoon the batter over the roasted carrots.

Use a spatula to gently spread the batter into an even layer, taking care not to disturb your carrot arrangement.

Bake at 350°F for about 45 to 50 minutes, or until the top is golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.

Let the cake cool in the pan for about 5 minutes.

Don't let it sit there for an hour. That maple caramel is meant to become the crown-not glue itself permanently to your cake pan.

Step 6 | Flip the Cake

Run a thin knife around the edge of the cake to loosen it from the pan.

Place a serving plate over the top of the cake pan.

Take a breath.

Then, holding the plate and pan firmly together, quickly flip everything over.

Lift off the pan.

There it is: a carrot upside-down cake with a glossy maple caramel crown.

If a carrot decides to stay behind in the pan, simply lift it out and place it back where it belongs. Serve warm or at room temperature.

Make the maple cream cheese whipped cream

In a large bowl, beat the cream cheese, powdered sugar, maple syrup and vanilla until smooth.

Slowly add the heavy whipping cream and continue beating on medium speed until the mixture reaches medium-stiff peaks.

That's it.

You want it thick enough to hold a spoonful on top of the cake but still soft and fluffy-not stiff like traditional cream cheese frosting.

Spoon it alongside each slice of warm carrot upside-down cake.

And then try not to eat it straight from the bowl.

A small cake with just the right amount of dessert

This is exactly why I love baking in a 6-inch pan.

A full-size carrot cake is wonderful when you're feeding a crowd. But when dinner is just the two of you, I don't necessarily want a refrigerator full of cake for the next week.

This little carrot cake for two gives you dessert tonight, a slice or two for tomorrow, and no giant cake hanging around asking to be eaten.

Although, let's be honest.

That maple cream cheese whipped cream may not make it to tomorrow.

Ingredients
 
 

Roasted Carrots:

  • 4 to 6 whole carrots, peeled. Use a mix of colored carrots
  • 1½ tablespoons olive oil
  • kosher salt

Maple Carrot Cake

  • ½ cup maple syrup
  • 2 tablespoons packed light brown sugar
  • 2 tablespoons unsalted butter

Carrot Cake Batter

  • ¼ cup dark raisins
  • 1 cup carrots , washed and shredded
  • ¾ cup all-purpose flour plus 2 tablespoons, sifted
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 rounded teaspoon unsweetened cocoa powder
  • 2 large eggs room temperature
  • ¾ teaspoon vanilla extract
  • ⅓ cup granulated sugar
  • ⅓ cup dark brown sugar firmly packed
  • ⅓ cup vegetable oil or corn oil

Cream cheese whipped cream

  • 4 ounces cream cheese chilled
  • 2 tablespoons confectioners' sugar
  • 1 tablespoons maple syrup
  • 1 teaspoon vanilla extract sifted
  • ½ cup heavy whipping cream

Instructions
 

Roasted Carrots

  • Preheat oven to 400℉. On a baking sheet covered with foil, lay the whole carrots in a single layer. Coat 30-45 minutes, depending on the size of the carrots.
  • This can be done a day ahead. Just store in an air tight container in the refrigerator.

Maple Carrot Cake

  • Preheat oven to 350℉ /175 ℃ with a rack in the middle of the oven.  Grease a 6-inch cake pan and line it with a greased parchment round.
    Melt 2 tablespoons butter in a small pan over medium heat; add maple syrup and brown sugar and cook, stirring, until sugar dissolves. Bring to a boil and cook for another 2 minutes; remove from heat and set aside. When mixture has cooled a bit, pour it into a 6-inch round cake pan.
    Split the roasted carrots lengthwise and arrange them over the sugar mixture.

Cake Instructions:

  • To steam the raisins, place them in a small glass bowl, sprinkle with water, cover and microwave for about 30 seconds. Leave them covered and sitting in the microwave.
  • Sift together the flour, baking powder, baking soda, salt, cinnamon and cocoa in a bowl and set aside. In a medium bowl or the bowl of your stand mixer (if using), whisk the eggs. Whisk in the vanilla, both sugars, and the oil until smooth and thoroughly combined. If using your mixer on low speed, add the dry ingredients and mix only until incorporated. Stir in the carrots and raisins.
  • Carefully spread batter over the carrots, using a spatula to make sure it is evenly distributed. Bake until top of cake is golden brown and edges begin to pull away from sides of pan, about 45 to 50 minutes; a toothpick inserted into center should come out clean. Let cake cool for 5 minutes.
  • Run a knife around edge of pan; put a plate on top of cake and carefully flip it so plate is on bottom and pan is on top. Serve the warm or at room temperature with cream cheese whipped cream.

Cream cheese whipped cream

  • Using a hand-held mixer or stand mixer, beat cream cheese, sugar, maple syrup and vanilla in bowl on medium high speed until medium-stiff peak, 2 to 3 minutes. Scrape down sides of bowl as needed. Serve immediately. Leftovers will last for a day.

Notes

Roast the carrots ahead: Roast them up to one day ahead and refrigerate until you're ready to assemble the cake.
  • Use a 6-inch cake pan: The small pan is what gives this recipe its just-right size for two.
  • Don't skip the parchment: A parchment round plus a well-greased pan makes releasing the maple caramel much easier.
  • Invert while the cake is still warm: Let it cool for about 5 minutes, then flip. Waiting too long can allow the caramel to set against the pan.
  • Cream cheese whipped cream: Store leftovers covered in the refrigerator for up to 3 days. Give it a quick stir before serving if needed.
  • Serving: The cake is wonderful warm, at room temperature, or chilled. I especially love it slightly warm with a cold spoonful of maple cream cheese whipped cream.
