Port and Tonic (Porto Tonico) – An Easy Summer Cocktail from Portugal

Looking for an easy summer cocktail that feels a little more special than a glass of wine but takes less than two minutes to make? This refreshing cocktail for summer became my vacation ritual while traveling through Portugal, where locals skip complicated cocktail menus and reach for a simple Port and Tonic or Porto Tonico instead.

If you've never tried a port and tonic, you're in for a surprise. It's not a gin and tonic-it's a wine cocktail made with Portuguese port wine and tonic water. Light, crisp, slightly fruity, and endlessly customizable with seasonal garnishes, it's one of my favorite wine cocktails for summer. Even better, when you're cooking and entertaining for two, a bottle of port stays fresh long after opening, making it perfect for enjoying a cocktail tonight and another next weekend.

What Is a Porto Tonico?

A Porto Tonico (or Port and Tonic) is Portugal's answer to the Aperol Spritz. Traditionally made with white port and tonic water, it's a refreshing cocktail for summer that's light, citrusy, and incredibly easy to make.

The combination sounds unusual at first. Most people think of port as a rich, sweet after-dinner wine served in small glasses. I certainly did.

Then I visited Portugal and discovered an entirely different side of port wine.

Locals were sipping chilled white port mixed with tonic water over ice, garnished with citrus and herbs. One sip and I understood why this cocktail has become a Portuguese favorite. The tonic adds brightness and effervescence while the port contributes fruit, floral notes, and just enough sweetness to make the drink feel balanced and refreshing.

Wait... Port Isn't Always Red?

Like many people, I assumed port meant tawny or ruby port-the rich red styles often served with dessert or cheese boards.

Portugal offers much more than that.

White Port

White port is the traditional choice for a Porto Tonico. Made from white grapes, it ranges from dry to sweet and creates a crisp, refreshing cocktail with citrus and stone-fruit notes.

Rosé Port

Rosé port is my personal favorite for summer cocktails. It brings beautiful berry flavors, a blush-pink color, and a fruit-forward character that pairs perfectly with tonic water. If you're introducing someone to port and tonic for the first time, rosé port is often the easiest place to start.

Tawny Port

Tawny port has rich caramel, nutty, and dried-fruit flavors. While delicious on its own, it's generally too rich and heavy for the bright, refreshing style of a classic Porto Tonico.

Why Port Is Perfect for Cocktails for Two

One of the reasons I love port-based cocktails is practicality.

Unlike many wines that lose their freshness quickly after opening, port keeps remarkably well. Simply replace the cork and store the bottle in a cool place. That means you can enjoy a port and tonic on a warm Wednesday evening and still have plenty left for a Saturday happy hour.

For those of us cooking for two, that's a huge advantage. No pressure to finish an entire bottle at once.

The Garnish

While the cocktail itself is simple, the garnish transforms it into something memorable.

Traditional Portuguese garnishes often include lemon and even a cinnamon stick. For summer entertaining, I prefer something a little more colorful.

Thread a thin orange slice and a strawberry onto a fresh rosemary sprig and rest it across the glass. As you sip, the aroma of rosemary mingles with the fruit-forward port and crisp tonic water. It's refreshing, elegant, and beautiful enough for guests while still being easy enough for a weeknight cocktail.

  • Grapefruit peel

How to Make a Refreshing Cocktail for Summer: Port and Tonic

The key to a great Porto Tonico is plenty of ice and quality tonic water.

Whether you choose a dry white port, a fruity rosé port, or a rich tawny port, look for a bottle produced in Portugal. Authentic Port wine comes from Portugal's Douro Valley, where centuries of winemaking tradition create the distinctive flavors that make a true Porto Tonico so refreshing.

Fill the glass completely with ice before adding the port and tonic. Then use a simple 1:2 mix of dry white port and tonic water.  The extra ice keeps the drink cold and refreshing while preventing dilution.

A large balloon wine glass is traditional in Portugal, but a highball glass works beautifully too. Garnish with a a slice of orange and a sprig of rosemary.

Serve it alongside grilled seafood, charcuterie boards, summer salads, or simply enjoy it on the patio after dinner.

  • Fill a large balloon glass or highball glass with ice. Pour in the port. Top with tonic water. Stir gently to combine.
  • Garnish with an orange slice and rosemary sprig. Serve immediately.

Notes

White port creates the most traditional Porto Tonico.
Rosé port offers a fruitier, more colorful summer cocktail.
Replace the cork after opening; port keeps well, making it ideal for cocktails for two.
For the most refreshing results, chill both the port and tonic before mixing.
