This small-batch version brings all of the flavors of New York City's famous street carts to your own kitchen-perfectly sized for two, with tender yogurt-marinated chicken, golden turmeric rice, and plenty of creamy sauce for drizzling.

The story behind this recipe

One of my favorite things about visiting family in Manhattan is wandering the streets and discovering something delicious around every corner. New York City truly is a melting pot of cuisines, and nowhere is that more obvious than at the iconic halal carts.

If you've ever stood in line at one, you know exactly what I'm talking about. The smell of seasoned chicken sizzling on the griddle, fluffy yellow rice piled into takeout containers, fresh salad tucked alongside, and then the vendor asks the all-important question:

"White sauce? Hot sauce?"

The answer around our table is always, "Extra white sauce."

Living in Minnesota, we don't have halal carts on nearly every corner, so recreating this meal at home became a fun challenge. After plenty of testing-and borrowing a few smart techniques from America's Test Kitchen-I finally landed on the version that reminds me most of those Manhattan lunches.

The biggest surprise? The secret to restaurant-style yellow rice isn't just the turmeric. It's cooking the basmati pasta-style, then rinsing it after cooking so every grain stays separate and perfectly fluffy instead of sticky.

While you certainly can make homemade hot sauce, I keep dinner easy. A bottle of sriracha and a jar of chili crisp go right on the table so Mark can make his as spicy as he likes while I happily enjoy mine with an extra drizzle of white sauce.

If you've never experienced halal cart chicken, think of it as one of New York City's most beloved street foods. Vendors serve seasoned chicken over fragrant yellow rice, alongside shredded lettuce or cabbage and tomatoes, then finish everything with a generous drizzle of creamy white halal sauce and optional hot sauce.

Despite its name, every vendor has their own version. Some use chicken thighs, others add lamb, and every white sauce recipe is a closely guarded secret. What they all have in common is tender seasoned meat, fluffy turmeric rice, fresh vegetables, and a creamy sauce that ties everything together.

This homemade version captures those classic flavors while using easy-to-find grocery store ingredients.

What makes this recipe Better?

A few simple techniques make this recipe taste surprisingly close to the famous New York carts.

  • Yogurt Marinade - The yogurt gently tenderizes the chicken while helping the spices cling to every bite.
  • Pasta-Style Rice - Instead of cooking basmati rice by absorption, you'll boil it like pasta. This produces wonderfully firm, separate grains. You can also use long-grain white rice.
  • Homemade White Sauce - The creamy combination of mayonnaise and yogurt creates the tangy sauce that everyone remembers. Don't be shy-drizzle generously over the chicken and rice.

This was my favorite tip from America's Test Kitchen. Rinsing the rice before cooking removes excess starch, and rinsing it again after cooking stops the cooking process while keeping every grain beautifully separate.

Skip the Homemade Red Sauce-Here Are My Favorite Shortcuts

If you've ever ordered halal cart chicken in New York City, you know the question is always the same:

"White sauce? Red sauce?"

The creamy white sauce is absolutely worth making at home-it pulls the whole meal together. But when it comes to the fiery halal cart red sauce, I take the easy route.

Since I don't make this meal every week, I don't want another specialty bottle rattling around in my refrigerator. Instead, I reach for one of the hot sauces I already have on hand and let everyone customize the heat at the table.

Here are a few of my favorite substitutes:

  • Harissa Paste - If you're looking for the closest match, harissa paste is my first choice. It's thick, smoky, pepper-forward, and has a rich texture that's very similar to classic halal cart red sauce.
  • Sriracha is probably the bottle I reach for most often. It has plenty of heat with just a touch of sweetness. It's a little thinner than traditional cart-style red sauce, but it's delicious drizzled over the chicken and yellow rice.
  • Tabasco, Frank's RedHot, or Crystal Hot Sauce - These classic Louisiana-style hot sauces deliver a quick burst of heat. They're thinner and tangier than halal cart red sauce, so start with just a few drops and add more to taste.

Want a Quick DIY halal hot sauce Version?

If you'd like something closer to the real thing without making a whole batch from scratch, stir together your favorite vinegar-based louisiana style hot sauce with:

  • A pinch of smoked paprika
  • A dash of ground cumin
  • A small squeeze of tomato paste
  • A pinch of cayenne pepper (if you like extra heat)

It takes less than a minute and gives the sauce a deeper, richer flavor that's closer to the bold red sauce served from New York City's halal carts.

How to Make Halal Cart Chicken and Yellow Rice

This recipe comes together in a few simple steps, and most of the hands-on time is easy prep. While the chicken marinates, you can stir together the white sauce, which gives the flavors time to mingle before dinner.

Step 1 | Marinate the Chicken

In a medium bowl, combine the yogurt, lemon juice, coriander, cumin, garlic powder, salt, and pepper. Add the chicken thighs and turn them until every piece is coated. Cover and refrigerate for at least an hour, or even better, overnight.

Yogurt does double duty here. It gently tenderizes the chicken while helping all those warm spices cling to the meat. Even if you're short on time, try to give it at least an hour-the flavor is worth the wait.

Step 2 | WHIP TOGETHER the White Halal Sauce

While the chicken marinates, whisk together the mayonnaise, yogurt, water, lemon juice, sugar, garlic powder, salt, and pepper until smooth and creamy. Cover and refrigerate until you're ready to serve.

You can make this sauce a few hours or even three days ahead!

The sauce might seem simple, but don't underestimate it. That cool, tangy drizzle is what makes halal cart chicken so memorable.


Step 3 | Make the Yellow Rice

Bring a large pot of well-salted water to a boil and stir in the turmeric. Just like when I cook pasta, I want the pasta water to taste like the sea. While the water heats, rinse the basmati rice under cold running water until the water runs clear. This washes away excess starch so the rice cooks into light, fluffy grains instead of becoming sticky.

Cook the rice in the boiling turmeric water for about 9 minutes, just until tender. Drain immediately, then rinse it one more time under cold water before gently tossing it with the vegetable oil.

This pasta-style method was one of my favorite tricks I learned from America's Test Kitchen. Step 4 | Bake the Chicken

Now we're going to broil. Yep, broil.

Place the chicken under a preheated broiler and cook until it's beautifully charred on both sides, flipping halfway through. The high heat creates those smoky, caramelized edges that give halal chicken its signature flavor.

Let the chicken rest for about 10 minutes before cutting it into bite-sized pieces. Resting the chicken isn't just extra time to wait-it gives the juices a chance to settle back into the meat so every bite stays tender and juicy.

Step 5 | Build Your Halal Chicken Bowls

Top with the browned chicken, then tuck the shredded napa cabbage and chopped tomatoes alongside. Finish with a generous drizzle of the white halal sauce.

Set a bottle of sriracha and a jar of chili crisp on the table so everyone can customize the heat to their own taste.

If you're anything like me, you'll reach for another spoonful of white sauce before you even sit down. It really is the finishing touch that brings the whole bowl together.

Ingredients
 
 

White Halal Sauce

  • 6 tablespoons mayonnaise
  • 2 tablespoons plain whole-milk yogurt
  • ¾ teaspoon water
  • ½ teaspoon fresh lemon juice
  • ½ teaspoon sugar
  • ¼ teaspoon kosher salt
  • Pinch garlic powder
  • Pinch black pepper

Chicken

  • 1 pound boneless skinless chicken thighs, trimmed
  • ¼ cup plain whole-milk yogurt
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ⅜ teaspoon black pepper

Yellow Rice

  • 1 cup basmati rice
  • 1½ teaspoons kosher salt for the cooking water
  • 1½ teaspoons ground turmeric
  • 2 teaspoons vegetable oil

For Serving

  • 2 cups shredded napa cabbage
  • 1 medium tomato chopped
  • Sriracha optional
  • Chili crisp optional

Instructions
 

  • Make the White Sauce: In a small bowl, whisk together the mayonnaise, yogurt, water, lemon juice, sugar, salt, garlic powder, and pepper until smooth. Cover and refrigerate for at least 1 hour or up to 3 days.
  • Marinate the Chicken: In a medium bowl, combine the yogurt, lemon juice, coriander, cumin, garlic powder, salt, and pepper. Add the chicken thighs and coat well. Cover and refrigerate for at least 1 hour or overnight.

Cook the Chicken:

  • Position an oven rack about 6 inches below the broiler element and preheat the broiler. Line a rimmed quarter baking sheet with aluminum foil for easy cleanup and place a wire rack on top.
  • Broil for 16 to 20 minutes, flipping halfway through cooking, until the chicken is nicely charred on both sides and reaches an internal temperature of 160°F to 165°F.
  • Let rest for 10 minutes before cutting into bite-size pieces.

Make the Yellow Rice

  • Bring a large pot of water to a boil. Stir in the salt and turmeric. Rinse the basmati rice under cold water until the water runs clear. Add the rice to the boiling water and cook about 9 minutes, until just tender.
  • Drain immediately and rinse briefly under cold water. Transfer to a bowl and gently toss with the vegetable oil.

Assemble Halal Style Chicken and Rice Bowl:

  • Divide the yellow rice between two bowls. Top with the bite-size chicken. Add the shredded cabbage and chopped tomatoes.
    Drizzle generously with the white halal sauce. Serve with sriracha and chili crisp on the side, if desired.

Notes

Chicken thighs are the best choice. They stay juicy during baking and develop delicious caramelized edges after a quick finish in the skillet. Don't skip the yogurt marinade. It tenderizes the chicken while helping the spices coat every bite.
Rinse the rice twice. Rinsing before cooking removes excess starch.
