Ingredients
Turkey Avocado Bacon Sandwich
3slicesapplewood smoked bacon
handful of arugula rocket greensabout 1 cup
1tablespoonextra virgin olive oil
1teaspoonfinely grated red onionor slices of pickled onion
½teaspoonbalsamic vinegar
salt and pepper,
1ciabatta rollsplit and toasted
2slicesGouda or Havarti
Gochujang mayonnaise
½avocado,ripe, firm, pit removed and cut into ¼" slices
4 -ouncesdeli turkey slicesroasted, smoked or your favorite deli sliced turkey
Gochujang Mayo
¼cup mayonnaise
1teaspoongochujang paste(Korean chili paste) or sriracha sauce
Make your pickled red onions, if using. The pickled red onion will need 30 minutes to become a delicious topping.
Using a microwave safe plate,line with 2-3 sheets of paper towels. Lay the bacon in a single layer, place another double layer of paper towels over the top. Microwave for 4-minutes,continue to cook in 2-minute increments until the bacon reaches desired crispiness.
In a bowl, combine the arugula rocket, olive oil and vinegar. Season with some salt and pepper. If you are not making the pickled red onions, add about 1 teaspoon finely grated red onion to the salad and Toss. Set aside until we are ready to layer the salad.
Gochujang Mayo
Whisk together mayo, gochujang paste, salt, pepper and lime juice in a small bowl; Set aside.
Assemble the sandwich
Slice a ciabatta roll in half lengthwise, rub each half with olive oil. Preheat your oven (or toaster oven) to 450 degrees. Place roll, cut side up on a baking sheet, now place cheese on the top piece of the roll. Toast in oven for about 4-6 minutes, until the cheese is melted.
Spread a generous layer of Gochujang mayonnaise on the other bottom half of the roll. Mash the avocado with a fork and season withsalt. Layer on the bacon, turkey, dressed arugula and piclked red onions if using. Add the top half of the ciabatta and gently push down one the sandwich. Slice the sandwich in half or wrap it and keep it in the fridge for a few hours before slicing.
