ripe cherry or paste tomatoes
halved

shallot

fennel bulb
finely chopped

garlic clove
thinly sliced

thyme

basil leaves

leaf
tarragon

tablespoon
sea salt

tablespoon
sugar

cayenne pepper

drops
Tabasco

Worcestershire sauce
Instructions
In a large bowl, combine all ingredients. Cover and let macerate at room temperature for 2 hours.
Pulse in a food processor in small batches—just three quick pulses. Return to the bowl and macerate for another 3 hours.
Place a fine mesh sieve over a bowl. Line sieve with muslin or cheesecloth. Pour in the tomato mixture, tie the cloth, and let drain for 2–3 hours.
Taste, adjust seasoning, and chill. Use within 4–5 days.
