Creamy Leftover Turkey and Wild Rice Soup Recipe For Two
This Creamy Leftover Turkey Wild Rice Soup recipe is hearty, satisfying and full of carrots and wild rice in a light, creamy broth. It's great for using up leftover turkey from the holidays and an easy, comforting classic, perfect for chilly days!
3cupslow-sodium chicken broth, or use Better Than Bullion 3 teaspoons Better Than Bullion mixed into 3 cups of water
3cupswhite wine
2Tablespoonsflour
½cupheavy cream
1 ½cupschopped cooked turkey
salt and pepper
Instructions
For the soup:
Toast rice in a Dutch oven over medium heat until rice begins to pop, 5 to 7 minutes.
Stir in broth, wine, carrots, thyme, and baking soda and bring to boil. Reduce heat to low and simmer, covered, until rice is tender, about 1 hour.
Whisk flour and cream in bowl until smooth. Slowly whisk flour mixture into soup. Add turkey and simmer until soup is slightly thickened, about 10 minutes. Season with salt and pepper. Serve.
